Crystallized Honey: Why & What To Do

Left: Non-Crystallized, Right: Crystallized

One thing I get asked about the most is why honey crystallizes. The crystallization process is natural and spontaneous. Pure, raw and unheated honey has a natural tendency to crystallize over time with no effect on the honey other than color and texture. There is a simple way to return honey to its original state! All you have to do is heat it! But hold on... be careful when doing this. It's important to remember not to heat the honey over 110 degrees Fahrenheit. Honey has antibacterial properties and other beneficial components that you want to preserve! To liquify our honey, I do the following: place the jar (only do this with glass jars) in the crock pot, turn it on "keep warm" and stir it occasionally. If your honey is in a plastic bottle, just place it in warm water. And that's it! A simple fix to bring your honey back to life!
